Why butter and pectin

Full fat butter incorporates equal amounts of Omega-3 and Omega-6 fatty acids, which help reducing cholesterol levels, inflammation and maintaining hormonal balance, the proper functioning of the brain and nervous system. Butter contains vitamin A, which is very useful for the hair, the eyes and the skin, as well as vitamins D, E and K. The butter does not contain any trans fats associated with the so-called "Bad" cholesterol. Two tablespoons of butter have about 8g fat, of which about 30% are monounsaturated fats, the same fats as in olive oil.

Pectin is a type of sugar that can be found in varying amounts in all plants. It is rich to fibers carbohydrate that helps reduce blood cholesterol, improves the function of the colon, slows digestion and emptying of the stomach, which in turn increases the feeling of satiety.

Mini apple strudel with puff pastry

Necessary products

3-4 apples

80g butter with pectin

puff pastry

sugar to taste


1 vanilla

½ coffee cup walnuts

2-3 crushed powder biscuits

yolk for spread

powdered sugar



Peel the apples, cut them into small cubes and clean them of the seeds. Apples can also be shredded.

The half of the butter with pectin is poured into a frying pan and after it is melted, add the apple pieces. Add 3-4 tbs. water. After the water boils off and the apples soften, add sugar and stir until it dissolves. This way the apples will be caramelized slightly.

Take off the pan with the mixture from the heat and add to it the walnuts, the cinnamon, the vanilla and the biscuits. Mix and leave it to cool.

Spread the melted butter with pectin on the puff pastry, then with a sharp knife, cut it into squares. In each of the squares put a little of the apple mixture and clip the opposite corners of the square with each other. Arrange the obtained packets in a pan lined with baking paper and spread them with yolk. Bake on 180-190°C for 35-40 minutes until got a nice brown tan top and bottom. Remove the strudels immediately from the oven and leave them on the grill to cool.

Once they are not so hot, sprinkle with powdered sugar and they are ready to be served.
